College Recipes: Fresh Tomato Salsa

Next week is freshmen move-in week for several colleges and universities around the US. For many of these students, it is the first time they may have to prepare meals on their own. This, unfortunately, means your freshman might be surviving on a steady diet of ramen noodles and reheated pizza. If you want to ensure your son or daughter gets SOME nutritious food this semester, I have written up a recipe for salsa that comes from tomatoes straight from the garden. This will yield 16 pints of salsa.

College Recipes: Fresh Tomato Salsa

Ingredients

30 Fresh Tomatoes on the Vine

5 Red Onions

5 Yellow Onions

5 Assorted Green, Red, and Yellow Peppers

4 Chili Peppers

2-3 Other types of Hot Peppers (You can adjust this amount if your child likes milder salsa)

1 Cup Fresh Lemon Juice

2 Teaspoons of Garlic Powder

3 Tablespoons of Salt

4 Tablespoons of Pepper

5 Table of Freshly Chopped Cilantro

 

Be sure to wear gloves while preparing this!

  1. Boil tomatoes for 3 minutes to loosen skins. Peel and chop the tomatoes and drain the juices off in a colander. Cut the tomatoes in quarters and place them a large bowl.
  2. Dice all the peppers, onions, and cilantro. You can do this in a food processor to save time.
  3. Combine all the vegetables in a large bowl and stir in the salt, pepper, lemon juice, and garlic powder.
  4. Do a quick taste test to measure the spiciness.
  5. Put all the ingredients into a pot. Bring to a boil and then let them simmer for 15 minutes. Keep stirring so the ingredients don’t stick.
  6. Gather 16 canning jars and fill them. Leave a 3/4 inch spot at the top. Wipe the tops and screw the lids on tightly.
  7. You can now process them in a steam canner, or if you do not have one, a boiling water bath for 15 minutes will do.

At least if your college student decides to have chips for dinner, they will have something healthy to go along with it!
